This rosé is composed of fruit from the highest hillside of the property at a 1,150 ft altitude. The grenache head train vines were hand-harvested at night and pressed on a gentle cycle, extracting the exact color and flavor of our grapes. The juice was then transferred into a stainless steel tank for a smooth, cold fermentation. It then went into one of our Amphora concrete tanks for five more months. This concrete aging style gave us the opportunity to let the wine express itself on its own without adding or taking tastes and smells. It gives us a true taste of the terroir where it was grown. You will taste a little of our decomposed Speckle Rock granite terroir. Enjoy!
